Joseph and Elisa Halcomb own Shallow Springs Ranch that was originally acquired in 1968 by Elisa's father Jack.  Jack specifically bought the property for the purpose of raising his family, horses and Hereford cattle.  In 1999, Joseph and Elisa took over the ranch and continued the tradition of raising pedigreed Herefords.   In 2003, Joseph and Elisa began phasing out the Hereford breed for transition to Purebred and Full Blood Wagyu.  Their goal remains to continue raising a better quality beef with superior taste that is healthier for the body.

Today, Joseph and Elisa maintain a small herd of Wagyu cattle.  The herd is well cared for and only fed with hay that is either grown or the ranch or purchased locally.  Each cow is personally known and treated with respect and kindness.

Elisa runs the daily ranch operations while Joseph is responsible for marketing and sales.
